Meet Our 2016 Staff

Aliki Mehas

Having lived in Portland, Oregon all her life, Aliki shares a vast love for the outdoors and exploring!  Her love for the faith has inspired many of her adventures, including a Project Mexico mission trip and her most recent expedition, a summer spent in Greece at Ionian Village!

Aliki is currently studying Biology with emphasis in Pre-Medicine at Grand Canyon University, however she will be heading back home to attend Oregon State University to complete her degree!  When she is not studying, you will most likely find her at home with her two adorable younger siblings, at church, or hiking a mountain somewhere.   

Camp has been a huge part of Aliki's life, showing her the power of the Orthodox Faith, and has held some of her most cherished memories.  She has been eagerly awaiting camp, and she can not wait to see what this summer at All Saints has in store for us all!

Emma Coles

Emma Coles couldn’t be more excited to be a counselor this summer! She grew up attending Camp St. Nicholas, the Antiochian Orthodox camp in California and can’t wait to meet new campers and friends at All Saints Camp! She is currently a student pursuing nursing at Arizona State University. She is a Sunday school teacher out at St. Ignatius of Antioch church in Mesa, Arizona. Emma is passionate about coffee, learning new things, singing, swing dancing and learning to love the Lord and her neighbor in new, dynamic ways!


Katerina was born and raised in the sunny city of Scottsdale, Arizona. She’s currently attending Arizona State University (Go Sundevils!) where she’s majoring in Psychology and minoring in Child Life. She has participated in different camps and programs through the church as both a camper and counselor throughout the years including: All Saints, Camp Agape, Vacation Bible School and retreats, as well as being involved in the different youth programs such as Greek dance, First Fridays and helping out with GOYA at Assumption Greek Orthodox Church. She loves volunteering at her parish and helping out in anyway she can! Some of her other hobbies include cooking & baking, then eating, singing—loudly and proudly (even when she doesn’t really know the words)—and spending time with her friends and family! Katerina is so excited to be back at All Saints as a counselor this year and is even more excited to have an amazing summer together!


Mara is a Cleveland, Ohio native (Go Lebron!) who grew up attending St. Nicholas Orthodox Church in Mentor, Ohio. During the summer, Mara loved being outside; it didn't matter if she was camping, exploring her family's 8 acres of land, or swimming at the lake, summertime in the Midwest was the best! But, when she was accepted to Northern Arizona University, it was the perfect opportunity for a new adventure; she drove 2300 miles across country to begin an exciting new chapter of her life in Arizona. Since graduating and moving down to the Valley of the Sun, she attends Sts. Peter and Paul Orthodox Church in Central Phoenix. One of her favorite things to do is find new coffee shops around the valley with her friends—the best ones are those that are dog friendly so she can bring her puppy, Louie! Mara is active in youth and teen ministries, setting up social and service based events for the teens/ young adults at her church. Mara is beyond excited to be apart of camp this year and looks forward to the spiritual growth both for herself as well as for all the youth attending! 


Paraskevi Constantinides is from Dublin, California and attends the Resurrection Church in Castro Valley, CA. She just finished her first year of undergraduate studies at Regis University in Denver, Colorado to earn her BS in Health and Exercise Science with a minor in Neuroscience. With this, she hopes to build a career working with kids with disabilities to be able to adapt to their prosthetics. When she isn’t studying, she is working for a non-profit organization or sipping tea and reading an action or mystery novel. She enjoys friendly competition in both physical and mental challenges, as well as the outdoors from the beach to the snow and anything in between.

Grace Woodroffe

Grace hails from the Great White North of Canada, where she rides her polar bear across the tundra in her luxurious parka while drinking her Tim Horton’s coffee… Ok, not really, but wouldn’t that be cool?!? Grace was born and raised in Edmonton, Alberta, Canada, where she went to MacEwan University for her Bachelor of Science in Nursing,  recently graduating in April. In September, Grace will be starting a full time position as a nurse at the Pediatric ICU for the Stollery Children’s Hospital in Edmonton. Growing up, Grace was a regular attendee of  summer camp and then worked as a counsellor for two years. However, she has had a five year break from the camp ministry as she has been volunteering for Project Mexico for the past five summers. When Grace isn’t building homes in the dusty hills of Tijuana, she loves playing soccer, baking delicious things found on Pinterest, and reading memoirs. Grace is so excited to be staff at ASC this summer, and she looks forward to creating moments with all of you! 


Anastasia Deffigos

Anastasia Deffigos was born and raised in Scottsdale, Arizona and attends both Assumption Greek Orthodox Church and Holy Trinity Cathedral.  She is going into her sophomore year at the University of Arizona in Tucson...BEAR DOWN!  Anastasia plans on getting a dual degree in both Public Health and Marketing.  She plays an active role in both Greek life at her school and various other clubs on campus.  She has been very involved in both her parishes by participating in GOYA, FDF, Greek dance, Vacation Bible School, and other programs.  She has attended All Saints Camp, Ionian Village, and Camp AGAPE, and cherishes her experiences at all of them.  These camps gave her the best summers of her life! Anastasia has some of her best memories at camp hanging with friends, making friendship bracelets (of course), singing campfire songs (though she is admittedly tone deaf!), and growing in her faith through the services.  This is why she is so excited to come back as a counselor this summer and have an amazing time! She can't wait to meet all of you soon!

Jordan Normoyle

Jordan Normoyle was born and raised in Modesto, CA, but is headed to the desert in the fall to pursue her Masters in Elementary Education at ASU. Jordan enjoys filling her time adding points to her Starbucks gold card, tree-hugging, obsessing over the daily puzzler newspaper page, chasing sunsets (and her dog when she escapes from the yard), picking up litter, eating Thin Mints, and racking up memories per gallon on her lovely travel companion, Sydney the Subaru…always en route to visit one of the many beautiful friends she has met through her years of summer camps! Jordan will be spending the first half of her summer south of the border in Rosarito, interning, building homes, and seeing life from a new lens at Project Mexico & St. Innocent Orphanage. Jordan is beyond ecstatic and grateful to come to All Saints Camp this year and get to know all of you!


Laura was born and raised in Tempe and is an Arizona baby through and through (and can prove it by walking to the mailbox barefoot in July). She attended ASU and earned her degree in Family and Human Development with a concentration in Child Life Studies. Six years after first deciding what she wants to be when she grows up, she has finally received her credentials as a Certified Child Life Specialist. While she waits to find a job in her field, she is blessed enough to spend her days helping raise her baby niece, being involved in church ministries, drinking eighteen cups of coffee, and GETTING REALLY EXCITED FOR CAMP. 

Laura attended All Saints Camp every summer growing up and found it to be a constant blessing throughout her life. From forming some of her most meaningful friendships, to growing stronger in her faith, Laura is eternally grateful for the joy camp has brought her throughout the years and is elated to return as a counselor. She is eager to join her lifelong passion for working with children with her love for her faith and to be able to share the beauty of Orthodoxy with our youth. She can't wait to see all of the campers she knows and to meet everyone that she doesn't! 


Mia was raised in the small town of cowboys in Cave Creek, Arizona.  She has just finished her freshman year at Arizona State University in the W. P. Carey School of Business for Corporate Event Planning, Go Devils! While balancing work and school, she loves to go see movies with friends and continuously watch Netflix. She also enjoys hiking and sight-seeing the beauty of the desert.  She is super athletic and loves to play soccer in her down time.  Her commitment to her home town church at Holy Trinity Phoenix, AZ has always been a priority.  She has been to All Saints for three years, and has experienced Ionian Village in 2014 as a camper as well.  This is her first year being a counselor and showing that there is fun within everything! Her jokes are bad but it’s okay because they make you laugh. Mia has been involved with Greek dance and FDF since she was three years old, and she wishes to help others gain that kefi!  After long weeks of studying in school and finishing finals, her view of a nice summer break is to help others connect to their faith and find peace through summer camp!


Born and raised in Las Vegas, Talia grew up at the parish of St. John the Baptist. From an early age, she knew that even if you aren’t hungry, you always eat at yiayia’s house, and that Greek school was a household requirement (making a fuss would later on lead her to a front row seat at Kyria Antonia’s private tutoring sessions). Growing up, Talia developed a strong love for Greek dance and the camp ministry in particular, and she is now extremely passionate about using these ministries to engage today’s youth in their faith.

Talia attended her first year of camp almost ten years ago and formed relationships that had changed her life forever. It is because of those friendships that Talia ultimately made the decision to move to Arizona, which she now calls home. She is a senior at Arizona State University, studying to receive a Bachelor of Science in Family and Human Development and a Certificate in Child Life. Talia enjoys spending her free time eating at food trucks, enjoying time with friends, and planning her upcoming wedding.

After many years of attending camp, Talia is thrilled to be joining ASC staff as a counselor. She can’t wait to have the chance to facilitate friendships, memories, and spiritual growth with each camper that she has the pleasure of working with.

Alexander Eliades

Alexander Eliades is in his first year as a seminarian at Holy Cross and is loving it! Born and raised in the Bay Area in California and attending Nativity of Christ in Novato growing up, he finished his undergrad in History at UC Davis in 2014, traveled abroad and worked for a year, and is loving learning more about the Church at Holy Cross! If you can't find him in the classroom or chapel, he'll usually be on the basketball court or doing other such athletic activities (or watching the Celtics at the Gahhhden or the Sawx Fenway). He can't wait to have a crazy fun summer and help in bringing us all closer together and to Christ!


Foti hails from Winnipeg, Manitoba, Canada. He has been involved with his home parish of St. Demetrios for many years including GOYA, Camp Met, and youth fundraisers. Foti has some extensive camp counsellor experience ranging from his hometown of Winnipeg, in Vancouver, and in Minnesota. He has built such strong relationships with his campers from past years that they still keep in touch. He started and was president of the first OCF chapter in his hometown. In his spare time, he enjoys playing hockey as a goalie, stand-up comedy, traveling, camping, growing spiritually, writing jokes, and reading. 

Foti hopes to help the campers grow spiritually and also bring a Canadian influence to All Saints Camp.…Eh?


Marc joins the ASC staff from Atlanta, GA. He has served as a camp counselor for Ionian Village (2010 & 2011) and for the Metropolis of Atlanta (2008 & 2009). He is so incredibly excited to be coming back to camp! What has he been up to since 2011, you ask? Great question!

Marc works in advertising, which took him up to New York City in early 2012. He recently moved back home to Atlanta, where he’s enjoying the slower pace and abundant space. Since then, he’s tried to focus on living life according to four pillars: Faith, Family, Friends and Laughs (FFFL). Luckily, All Saints Camp is a place where campers, staff and clergy alike have the opportunity to grow in their Faith, become an ASC Family, make lifelong Friends and have many, many Laughs. Let’s do this!


Michael’s story begins in Scottsdale, Arizona, where he grew up right next door to Assumption Greek Orthodox Church. Michael was one of the first people to be baptized by Father Andrew in the church and has always felt like he has grown with the church. When he isn't at work or school, he can be found teaching Greek dance and Sunday school. While he absolutely loves the kids he teaches, he sometimes feels like they give him a few too many grey hairs. Michael also helps lead the sometimes rambunctious boys in the altar and assists with GOYA. His favorite memories include going to Ionian Village, where he grew in his faith and his heritage, and attending the Oratorical Festival at St. Nicholas Ranch, where he cultivated and learned to articulate his faith. This will be Michael’s first year as a counselor at All Saint’s Camp, and he is absolutely excited to see what God has planned for this summer!


Ty wasn't born Orthodox, but he joined the family as soon as he found out that the Early Church still existed!  Born and raised in Denver, Colorado, he now has spent nine years in Arizona. While in Denver, Ty worked with Youth Ministries—in both Church and Young Life—and he has seen so much growth in students. When you see what Christ can do with a students life, you get drawn into being apart of that work of the Holy Spirit. And Ty has been drawn in. In between time commitments of family life and serving people as a real estate agent, Ty is serving as the high school Sunday school leader and as parish council member at Saint George Greek Orthodox Church, in Prescott Arizona. Ty is very excited to be helping with camp this year and looks forward to seeing the Orthodox youth of Arizona building relationships with each other and growing deeper in love with Jesus Christ. 

Nectarios "Ari" gockel

Ari was born in Cleveland, Ohio and cherishes his young memories of the Orthodox Faith there.  This is because, when he was six, he and his family moved to Yuma, Arizona, where the closest Orthodox church was and is St. George in Palm Desert, CA—170 miles away.  Since graduating from the University of Arizona in Tucson with a degree in philosophy, he has been happy to spend most of his free time at St. Demetrios volunteering in the Parish council, the choir, the altar, as a teacher in Sunday school, and most recently, he was hired on as St. Demetrios’ newest Youth Coordinator.  As part of his ministry at St. Demetrios you’ll hear him say, “Glory to God,” to just about anything, and he’ll tell you to say it too.  Ask him about computer gaming, his dogs, futurology, music and singing, and just about anything under the sun.  He is excited to serve his community and the faith, and though he grew up without camps, he is earnest to contribute his time and talent at All Saints Camp to cultivate the youth of the faith into devout, present, and loving members of the church militant.

Connor Kruse

Connor Kruse hails from the very sunny North County San Diego, California. The son of a priest and graduate of Saint Katherine Orthodox College, he currently works for the college as an ambassador. His life goals consist of loving anything and anyone he can put his arms around. Though this is his first year at ASC, he is no stranger to youth and young adult ministry. He has worked closely with the Metropolis of San Francisco's youth and young adult office for the last year and a half. He has been blessed to be a part of the Be the Bee retreats across the United States and has assisted in many other various retreat across the country. Connor grew up attending the Antiochian summer camp, Camp St. Nicholas, in Frazier Park. He was a counselor for four years in addition to the eleven years as a camper. When summer camp comes around, it is his favorite time of the year. A huge ball of energy, he is constantly, enthusiastically bouncing around and helping the kids experience the many joys Christ offers through summer camp.

Some of his interests include, but are not limited to, the candle lit Paraklesis service, playing basketball, playing music, breakdancing, and rock climbing. He is a total nut and can't wait to goon around with all of the campers. 


Born and raised in Phoenix, Arizona, John is now a third year accounting student at Arizona State University. He currently helps out in the 7th/8th grade Sunday School classroom at Holy Trinity Greek Orthodox Cathedral. He is also a member of OCF at ASU. In his spare time, John enjoys reading, sports, fishing, watching the sun set, and long walks on the beach. He can't wait to see what this summer has in store for everyone!

Matt Walsh

Matt was born in Chicago, Illinois but was raised most his life in Phoenix, Arizona. Last year was Matt’s first time as a counselor, and he had a blast making memories with his campers! Matt is currently a sophomore at Mesa Community College and will hopefully be at ASU in the fall in order to pursue his dream, automotive engineering. Matt grew up in the country and loves all activities outdoors along with working with his hands. He always takes great pride in his work and loves to learn. Matt also loves involving himself in church activities including Greek dance, GOYA and Sons of Pericles.  Summer is coming quick, and he can't wait to see all of your bright and shinning faces!


Originally from the mean streets of Hershey, Pennsylvania, Nikos Koumontzis is a new addition to All Saints Summer Camp this year. The oldest of six boys, Nikos has been “counseling” since his brothers came into the picture. The Koumontzis family currently resides in Arizona and have been members of the Greek Orthodox community there for the last ten years. Nikos attends the University of Southern California, where he is earning his bachelor’s degree in Cinematic Arts. Outside of the classroom, Nikos is a student-athlete at USC as well as a member of the Phi Kappa Psi fraternity. Having been a part of GOYA, Greek dance, and other summer camps for nearly his whole life, Nikos is excited to be a part of the counseling team this summer!

Nicholas Barakos

Nicholas Barakos was going to be born in Los Angeles, California but was transferred in utero to Scottsdale where he spent the next 18 years at Assumption Greek Orthodox Church. There, he participated in Greek Folk Dance, choir, GOYA, and Oratorical Festival. Nick then transferred himself to New York City to study to receive a BA in theatre performance at Wagner College. He is a rising senior who loves musical theatre, video games, photography, making music, writing with friends, and of course, overanalyzing art. He’s so excited to return to ASC as a counselor! 

Michael Ingram

Michael Speed Ingram (yes his middle name is really Speed) was born and raised in Santa Cruz, CA.  He graduated from San Diego State with a bachelor's degree in journalism. Mike then moved to Sacramento to attend Fuller Seminary, where he was introduced to Orthodoxy by his roommate. However, Mike was not ready to convert, and while in seminary he couldn't shake the Journalism bug, so he moved to Oregon to be a TV Sports Anchor. God had other plans, though.  The TV station cut sports, so Mike moved up to the Northwest and went back to school at Eastern Washington University and received another BA, this time in Physical Education. While living in podunk Northern Idaho, Mike was going through a desert time in his faith, so he converted and came home to Orthodoxy. Mike was chrismated at St. John the Baptist Antiochian Orthodox Church in Post Falls, ID. Mike taught the High Schoolers for Sunday School at St. John's, and was a summer counselor for two years at Camp St. Mary of Egypt in the Northwest.  Mike is a PE teacher, attends St. George in Phoenix, and is involved in their Young Adult Ministry. Mike enjoys watching NFL Football, especially his San Francisco 49ers. He also enjoys surfing, working out, golf, and his claim to fame is playing Michael Jordan 1-on-1 (there's a video on Youtube)! Mike is looking forward to serving at All Saints Camp! 

Medical Staff

Carol Bafaloukos

Carol has been a certified Women's Health Nurse Practitioner for the past twenty years.  Currently she is finishing a program to extend her certification to family practice.  Carol has her bachelor's, master's, and doctorate in nursing.  She currently is the Director of Nursing at University of Phoenix and does clinical practice in women's health.  

Carol has been one of the All Saints Camp nurses for the past ten years.  She loves the experience and feels honored to be included each year.  

Lisa Bafaloukos

Lisa have been a Neuro Rehab Home Health Nurse for over twenty years, specializing in Head Injury Rehabilitation. She have spent my whole nursing career in Arizona and, she loves helping people reach their goals, no matter how small, to reclaim their independence. Lisa have attended St. Katherine Church in Chandler for fifteen years, and is currently the GOYA advisor along with her husband, Nick. She also assists with JOY, HOPE, the Greek dance group, and, she teaches 4th grade Sunday school.

Lisa enjoys being a part of our church youth ministries. This will be her first year at All Saints Camp, and she is really looking forward to the experience!
